Chicory: Colorful, Beneficial and Pretty!

Chicory (Cichorium intybus), a flowering plant belonging to the dandelion family, is native to Europe but has since spread globally. It often grows wild in roadside areas and fields. The plant is renowned for its vibrant blue flowers and its diverse applications as a food source and in herbal medicine.

Chicory has a range of culinary uses and even some health benefits:

Salads: The leaves are commonly used in salads, providing a slightly bitter flavor.
Coffee Substitute: Chicory roots are roasted, ground, and used as a coffee substitute or additive, especially in regions where coffee is scarce or expensive (I want to try this!)
Vegetable: The young leaves can be sautéed or used in dishes similar to spinach.
Digestive Health: Chicory root is high in inulin, a type of prebiotic fiber that promotes gut health.
Anti-inflammatory Properties: Some studies suggest that chicory may help reduce inflammation in the body.
Liver Health: It’s also believed to have properties that may help support liver function.

    Although invasive, I think it’s pretty to look at. I love the blueish hue!
